Sauteed Cod with Lemon-Parsley Sauce

Halibut, sole, or tilapia can also be used with this recipe. |
Ingredients: |

1 tablespoon |
|
butter |
|
1 tablespoon |
|
olive oil |
|
3 cloves |
|
garlic, thinly sliced |
|
1/2 cup |
|
chopped onion |
|
1 pound |
|
cod fillets |
|
|
|
juice of 1/2 lemon |
|
1 1/2 tablespoons |
|
parsley |
|
1 1/2 tablespoons |
|
crumbled, dried thyme |
|
|
|
salt and pepper to taste |
Directions: |

Heat the butter and oil in a skillet over medium-high heat until the foam subsides. Add the garlic and saute, stirring, for 5 seconds. Add the onion and saute for 1 minute. Add the cod and saute for 5 minutes, turning once (the fish will crumble). Add the lemon juice, parsley, thyme, salt and peper. Cover the skillet and cook the fish about 2 minutes, until the cod is opaque and flaky. Serve imediately.
