Orange Ginger Grilled Chicken

ginger, ground |
|
1/2 c |

orange juice concentrate |
|
1/4 c |
|
orange marmalade |
|
2 T |

water |

Directions: |
|
In mixing bowl, combine orange juice concentrate, ginger, orange marmalade, water, salt, and pepper. Mix to dissolve orange juice and marmalade. Pour half of marinade into small bowl. Baste chicken breasts with marinade from small bowl, and grill until cooked through, or until internal temperature reaches 170°F. Warm the remaining marinade in a microwave-safe bowl (or in a saucepan on the stovetop).
Garnish chicken with orange slices, and pass the melted sauce at the table if desired.
