Mexican Style Meatloaf

Ingredients: |
|
1 1/2 lbs |
|
lean ground beef (can substitute ground turky or pork, if you prefer |
|
1/3 c |
|
hot salsa |
|
1 can |
|
(4 oz.) chopped green chilies, drained |
|
1/2 tsp |
|
salt |
|
1/4 tsp |
|
pepper |
|
1 large |
|
egg |
|
1 small |
|
onion, chopped (1/4 cup) |
|
1/3 c. |
|
milk |
|
1/2 c. |
|
colby-monterey jack cheese, shredded |
|
1 tbsp |
|
Worcestershire sauce |
|
1 tsp |
|
ground mustard (dry) |
|
1 clove |
|
garlic, finely chopped |
|
1/2 c. |
|
Italian Style bread crumbs |
|
2/3 c. |
|
ketchup (or 2/3 c. picante sauce) |
Directions: |
|
1. Heat oven to 350 degrees.
2. Mix all ingredients except ketchup (or picante sauce).
3. Spread mixture in an ungreased loaf pan.
4. Spread ketchup (or picante sauce) over the top.
5. Insert meat thermometer so tip ins in the center of the loaf. Bake uncovered 1 to 1 1/4 hours until thermometer reads 160 degrees. Let stand for 5 minutes and then remove from the pan.
