Lemon Cilantro Rice

This tasty rice goes great with fish and I often serve seafood on a bed of this rice. I tend to have fresh cilantro on hand but you could also substitute parsley. |
Ingredients: |

1 Tbsp |

Olive Oil |
|
2 Cloves |
|
Garlic, minced |
|
4 Tbsp |
|
Fresh Lemon Juice |
|
1 cup |
|
Long Grain White Rice |
|
1 Tbsp |
|
Butter |
|
1 tsp |
|
Sea Salt |
|
1/4 cup |
|
Fresh Cilantro, Finely Chopped |
|
1 tsp |
|
Lemon Peel, Finely Grated |
|
1 3/4 cup |
|
Water |
Directions: |
|
Add your olive oil and butter to a pot on medium low heat. Rinse your lemon and grate in lemon peel, add minced garlic and sea salt then stir. Let simmer on stove for 5 min then add your water and turn up the heat to bring your liquid to boil. Add your rice and stir. Reduce heat and cook according to the directions on your rice being sure to stir occasionally and make sure you don't over cook your rice. (My rice cooks for 15 mins, then remove from heat. Let stand covered for 5 minutes or under rice is absorbed.) Stir in cilantro serve warm.
