Ham with Port Cream Sauce

Ingredients: |

1 tablespoon |
|
butter |
|
3 tablespoons |
|
shallots, minced |
|
1/3 cup |
|
dry white wine |
|
3 tablespoons |
|
port wine |
|
1 pound |
|
reduced-salt cooked ham steak |
|
1 teaspoon |
|
tomato paste |
|
1/2 cup |
|
heavy cream |
Directions: |
|
Heat the butter in a skillet over medium heat until the foam subsides. Add the shallots and cook until translucent, about 2 minutes. Add the white wine, port wine, and ham to the skillet. Bring to a boil, lower the heat, and simmer for 1 minute. Remove the ham from the skillet and keep warm.
Whisk the tomato paste and cream into the skillet, bring to a gentle boil, and simmer bout 4 minutes, unitl slightly thickened. Season with salt and pepper. Transfer the ham to a serving plate and pour the sauce over it. Serve immediately.
