Grilled Acorn Sqash

An alternative to baked acorn squash-- sliced and grilled acorn squash has a rich, smokey flavor. |
Ingredients: |

1 |
|
acorn squash |
|
1/4 c. |
|
olive oil |
|
|
|
salt and pepper to taste |
|
|
|
butter |
|
|
|
honey |
Directions: |
|
Preheat the grill and clean the racks.
Cut the sqash in half lenthwise (along the ridges, not across them) and scoop out the seeds. Proceed to cut the squash into slices (much like how you would cut a canteloup melon). Brush all sides of each slice with olive oil and sprinkle each piece with salt and pepper.
Grill away from direct heat (along the edges or on the top rack) over low heat for 10-20 minutes (until each slice pierces easily with a fork).
As you serve, remove the skin from each piece, and top with butter and honey, if desired.
