Ingredients: |

1/2 lb. |
|
chicken breast meat |
|
1 (12 oz.) pkg. |
|
frozen pork sausage links |
|
1/4 c. |
|
onion, finely chopped |
|
2 ribs |
|
celery |
|
1 |
|
green pepper |
|
1 lg. |
|
apple |
|
1/2 tsp. |
|
parsley |
|
1/4 tsp. |
|
sage |
|
1/4 tsp. |
|
seasoned salt |
|
1/4 tsp. |
|
pepper |
|
1/4 c. |
|
raisins (or dried cranberries) |
|
1 1/2 c. |
|
very hot water |

1 (6 oz.) box |

stuffing mix |
Directions: |
|
With a sharp knife, cut the sausage links into 1/2" medallions and the chicken breast meat into bite-sized pieces. In a large, heavy bottomed skillet with lid, brown the chicken and sausages.
In a small bowl, combine the raisins and hot water. Cover and set aside.
While the meat is browning, chop the onion, celery and green pepper. When the meat is cooked through, add the onion, celery and green pepper to the skillet. Core and chop the apple (peel it if you wish). Add to the skillet.
Sprinkle the parsley, sage, salt and pepper over the hot skillet and stir to mix.
When vegetables and apple tender, add the water and raisins. Bring the mixture to a boil and add the stuffing mix. Stir untill all pieces of the stuffing mix are wet. Cover skillet and remove from heat while you set the table (about 2 minutes). Fluff with fork or your spatula and serve hot.
