This chili recipe is super delicious and not too spicy--a must with my kids. I serve chili with toppings to let everyone customize their bowl. I usually go with shredded cheddar cheese, Daisy brand Light Sour Cream (my favorite sour cream brand hands down!) and a homemade black bean salsa for those who wanted it a little more spicy. Some of these ingredients you might not have and could skip but I promise once you have them you'll love them forever and have other uses for (Smoked Paprika, Hickory Smoke Salt and the secret ingredient Nesquik powder like you add to make Chocolate Milk). |
Ingredients: |
2 cans |
Black Beans (15 oz cans, drained) |
1 can |
Red Kidney Beans (15 oz can, drained) |
1 can |
Tomato Paste (6 oz can) |
1 can |
Hunts Fire Roasted Tomatoes (15 oz can, drained) |
2 Tbsp |
Smoked Paprika |
1 Tbsp |
Cumin |
1 tsp |
Garlic Powder |
1 tsp |
Hickory Smoke Salt |
1 tsp |
Nesquik Chocolate Powder |
1 tsp |
Chili Powder |
1 lb |
Ground Beef (lean 10% fat preferred) |
1 Tbsp |
Olive Oil |
1 cup |
water |
Directions: |
Heat 1 Tbsp of Olive Oil in a pan at medium heat. Add Ground Beef and season with salt and pepper, breaking apart and cook until browned. Drain off any excess oil. Transfer into a deep soup pot* and add the rest of your ingredients: 2 cans Black Beans (15 oz, drained), 1 can Kidney Beans (15 oz, drained), 1 can Tomato Paste (6 oz can), Hunts Fire Roasted Tomatoes (15 oz, drained), Smoked Paprika, Cumin, Garlic Powder, Hickory Smoke Salt, Nesquik Chocolate Powder, Chili Powder and 1 cup water. Stir together, put on the soup pot lid and reduce heat to low medium. Simmer for at least 30 minutes to allow the flavors to combine. *Serve with corn bread muffins.
*Crock pot alternative: Transfer cooked ground beef into a crock pot and follow the same directions above for the stove top method. Everything in this recipe is cooked so adjust your cooking time to what works best for your schedule--Either 4 hours on High or 8 hours on Low.
