An oriental inspired salad with crunch. Add grilled chicken and it can be a one stop entree. Substitute your own vegetables to find your perfect combination! |
Ingredients: |

boneless chicken breasts |
|
1 bag |
|
salad greens |
|
1 |
|
red bell pepper, chopped |
|
1 |
|
red onion, chopped (optional) |
|
1 |
|
medium cucumber, thinly sliced (optional) |
|
1 bag |
|
sliced almonds |
|
2 handfuls |
|
crunchy chow mein noodles |
|
1 |
|
bottle of oriental salad dressing |
|
|
|
sesame seeds |
|
|
|
broccoli, chopped (optional) |
|
|
|
pea pods (optional) |
Directions: |
|
Lightly season chicken breasts with salt & pepper. Grill over medium high heat until chicken is cooked through. Remove and cut into bite-sized chunks. Set aside.
Add all salad ingredients in a bowl and toss thoroughly. Add the chicken and give another toss.
Serve with dressing on side.
