Curry Chicken Salad

A Light, semi-spicy, quick Chicken Dinner. Serve with Whole wheat Pita or on a croissant.

In addition to the recipe, you will also need the following for this meal:

Nonfat plain Yougart
|
|

mayonnaise
|
|
1 2 tsp.
|
curry powder
|

diced red apple

Curry Chicken Salad

|
|
|
Serve with sliced honey dew melon and blue berry or poppy seed muffins. |
Ingredients: |

|
chicken breasts, cooked and chopped |
|
16 oz |
|
pre-sliced, tart apples |
|
1/3 cup |
|
golden raisins |
|
3 stalks |
|
celery, diced |
|
3/4 cup |
|
mayo |
|
2 tsp |
|
curry |
|
|
|
salt |
|
|
|
pepper |
|
1 pkg |
|
muffin mix |
|
1 |
|
honey dew melon |
Directions: |
|
Mix mayo and curry. Chop/dice apples. Toss all ingredients together. Salt and pepper to taste. Add more may of needed. chill before serving.
Prepare and bake muffins per package directions.
Serve with chilled honey dew melon.
