This casserole already has a protein, a starch, and veggies, so all you'll need to do is add a glass of milk and you'll have a well-balanced meal!

Tater Tot Casserole

This Midwestern favorite comfort food is SO easy to make! Veggies and ground beef in a creamy sauce covered with hot, crisp TOTS!
This recipe freezes well! I like to make an extra one to save or give to a friend. Freeze one in an aluminum baking dish (be sure to wrap tightly). When you're ready to eat the frozen meal, simply increase the cooking time by 10-15 min. |

1 lb. |

ground beef |
|
1 lb. |
|
frozen mixed vegetables |
|
1 (10 oz.) can |
|
condensed cream of mushroom (or celery) soup |
|
1 c. |
|
grated cheese, optional |
|
2 lb. |
|
frozen “Tater Tots” |
|
2 tsp. |
|
seasoning blend |
Directions: |
|
Preheat oven to 350° F.
Brown ground beef. Add condensed soup and frozen mixed veggies to pan. Stir frozen veggie and meat mixture, and pour into a 9”x 13” baking pan or casserole dish. Top with shredded cheese. Cover cheese with Tater Tots. Sprinkle Italian seasoning over top.
Bake at 400° F for 25-30 minutes, or until potatoes are golden brown and crispy.
