Tortilla Soup Delicioso!

  Healthy chicken noodle soup collides with chicken fajitas! I usually double this recipe, as this is popular with a croud and it freezes well. This recipe is wheat gluten free, but you're going to have to check the lable on your corn chips.
Ingredients:
  2 qt.   chicken stock
  1 lb.   chicken or turkey
  1/4 c.   olive oil
  4 c.   salsa
  1   onion, diced
  2 cloves   garlic, minced
  2   green pepper, diced
  2   lemon, juice of
    salt and pepper to taste
  1 lb.   corn, frozen
  2 (15 oz.) cans   black beans
  1 bag   tortilla chips
    Cheddar cheese, grated, for topping
    fresh cilantro to taste (optional)
Directions:
  Pour chicken stock into a large stock pot and heat over medium flame.

Meanwhile, sauté poultry in oil (even if it's already cooked through-- this will enhance the flavor). When meat is cooked through, dice it and add it to the soup.

Add salsa, diced onion & green pepper, garlic, lemon juice, corn, black beans, and salt & pepper to the soup. Simmer on medium for an hour or in a crock pot all day (this soup can be served right away as soon as it's hot, but the longer it's cooked, the more the garlic and other flavors will penetrate).

Fill each soup bowl with tortilla chips, then ladle soup over top of chips. Top soup with grated cheese and fresh cilantro.
