Vegetarian Pita Pizzas

  Quick, Mediterranean-style treats.
Ingredients:
  8   Whole Wheat Pitas
  8 oz.   Feta Cheese
  1 bag   Fresh Spinach
  2   Bell Peppers
  1 can   Olives, any color
  1   Tomato
  1 lb.   Mozzarella Cheese
  4   Mushrooms
    Olive Oil
    Minced Garlic
Directions:
  1) Prepare all veggies
a. Wash
b. Slice peppers, olives, mushrooms
c. Dice Tomato

2) Grate mozzarella, crumble feta.

3) Heat oven to 500 degrees.

4) Arrange pitas on baking sheets and brush with olive oil and garlic.

5) Sprinkly mozzarella on pitas.

6) Arrange veggies on pitas however you wish.

7) Dot with feta cheese to taste.

8) Bake until cheese is melted and pitas start to crisp, approximately 10-12 mins.

9) Serve and enjoy!
