Cheesey Hamburger & Broccoli Casserole

  quick and easy, economical dinner
Ingredients:
  1 lb   ground beef
  1/4 c   chopped onion
  16 oz   frozen broccoli
    salt
    pepper
  8 oz   shredded cheddar cheese
  1/2 c   heavy cream or milk
  1/2 c   mayo
Directions:
  Brown ground beef and onions in a medium skillet. Season w/ salt and pepper. Drain the fat. Meanwhile, put the frozen broccoli in a 2-3 qt casserole with a lid. Add 2 Tb. water, cover and microwave on high about 6-8 minutes, stiring every couple of minutes until tender crisp. Drain and stir in ground beef mixture.

In a 4 cup glass measuring cup (or other glass container for in microwave) place all sauce ingredients (shredded cheddar, cream or milk and mayo). MIcrowave on high about 2 1/2 minutes or until melted and smooth, stirring every minute. Add to the broccoli mixture and mix well.

Bake @ 350* for 20 minutes or until hot and bubbly.


1/4 of recipe= 37 gr protien / 10 gr carbs (net 6 gr)
1/6 of recipe = 25 gr protein / 7 gr carbs (net 4 gr)
