Simple Roast Chicken

  simple roast whole chicken
Ingredients:
  4 lb   chicken
  3 T   unsalted butter, soften
  1 T   tarragon, parsley or chives minced
    Salt & Pepper
  1 cup   water
Directions:
  pre heat oven 375*
1. Mix 2 T butter with herbs, 1/4 t each salt & pepper. Spread butter under skin over the breast. Season with salt & pepper.
2.Lay chicken in roasting pan rack breast side up. Melt remaining butter and brush over chicken. Pour the water into roasting pan. Roast 40 minutes.
3. Increase oven temp to 450*. Rotate pan in oven. Cook till breast registers 170* on thermometer about 30 minutes longer. cover and rest for 20 minutes before carving.
