Diabetic Cheesy Broccoli Cauliflower Soup

Cooking time: 40-45 minutes

Ingredients:
  4 Tbsp   Canolia Oil
  1/4 cup   Chopped Onion
  1/2 Cup   Flour
  2 Cups   Fat-Free Milk
  1 Cup   4 oz light Velveeta Cheese, cubed
  2 Cans   14 oz Low-sodium chicken broth
  2 Cups   Chopped Brocccoli , fresh or frozen
  2 Cups   Chopped Cauliflower, Fresh or Frozen
  1/4 Cup   Finely chopped or grated carrots
  1/4 cup   Chopped Celery
  1   Salt to taste
  1/4 tsp   Pepper
Directions:
  Prep time: 20 minutes
Cooking time: 40-45 minutes

1. Heat Canola oil in large saucepan. Stir in onion and saute until just tender
2. Stir in flour until well blended. Slowely add milk over medium heat, stirring constantly until thickened and smooth.
3. Stir in cheese, continuing to stir until cheese melts. Set aside.
4. In a separarte saucepan, simmer broccoli, cauliflower, carrots, and veleery in chicken broth until almost tender.
5. Season with salt, if you wish, and pepper.
6. Pour Cheesy sauce into vegetables and heat through.

Variations:

Instead of chicken broth, use 2 chicken bouillon cubes and 1 3/4 cups water in Step 4
Instead of cauliflower, use 2 additional cups of broccol, fresh or frozen
