Split Pea Soup

  Hearty and healthy soup that warms your tummy and satisfies your craving for comfort food!
Ingredients:
  1 1 lb.   bag dried split peas
  6 c.   chicken broth (or vegetable broth)
  2 lbs.   yukon gold potatoes, optional
  1 lb.   carrots, sliced
  4 ribs   celery, sliced
  1   ham bone (or pkg of diced ham), optional
  2   bay leaves
  1/2 tsp.   marjoram
  1/2 tsp.   black pepper
  1 med.   onion, chopped
Directions:
  Add the dried peas, ham bone and chicken stock to your stock pot, and bring the liquid to a boil.

Meanwhile, chop and slice your vegetables: onion, potatoes (no need to peel, just scrub), celery (with leaves), and carrots (peel those) and add them to the soup.

Add the bay leaves, marjoram, and pepper, and simmer for 30-60 minutes, stirring every so often, until the peas totally dissolve and your soup reaches a familiar consistency.

Note that you can also add all of your ingredients to a crock pot and cook all day to find completed soup waiting for you when you return home in the evening.
