Diabetic Caesar Salad

  Makes 8 Servings
Serving size is 3/4 cup
Prep Time: 15-20 minutes
Ingredients:
  8 Cups   8 - 12 Cups Romaine lettuce, or spring mix, torn into bite-sized pieces
  1/4 Cup   Vegetable Oil
  3 Tbsp   Red Wine Vinegar
  1 tsp   Worcestershire sauce
  1/2 tsp   salt
  3/4 tsp   Dry Mustard powder
  1 large   Garlic Clove, Minced
  1 1/2 Tsp   1 1/2 to 2 Tsp Fresh Lemon Juice
  1 Dash   Pepper
  1/4 Cup   1/4 to 1/2 Grated Parmesan Cheese
  1 1/2 Cups   Caesar-flavored, or garlic, croutons
Directions:
  1. Place Lettuce in a large bowl.
2. Combine next 6 ingredients in a blender or food processor.
3. Add fresh lemon juice and process until smooth.
4. Just before serving, toss with lettuce.
5. Sprinkle with pepper. Add Parmesan Cheese and toss well. Serve Croutons

Tips:

I have made this on more Sundays than I can count. I prepare the lettuce, blend the 6 ingredients , and get the hard cheese ready for my son to grate. I always use fresh lemon or fresh lime.

My family prefers a tart dressing. My friend adds 1 Tbsp sugar (not included in Nutritional Values).
