  Curry Chicken
Ingredients:
  1   Whole Chicken
  3 tbs   Olive Oil
  1 c   Minced Shallots
  3   Cloves of Garlic
  1 c   Carrots
  1 tbs   Salt
  1 tbs   Pepper
  3 oz   Curry Powder
  4   Potatoes peeled,sliced
  2   Large Onions
  2 c   Chicken Stock
Directions:
 
1 whole chicken
3 tablespoons olive oil
� cup minced shallots
3 garlic cloves
1 cup carrots
1 tablespoon salt
1 tablespoon pepper
3 ounces curry powder
4 potatoes peeled and sliced
2 large onions
2 cups chicken stock

1. Wash pieces of chicken. Set in a bowl filled with ice and water (an ice bath.)

2. Coat large pot with olive oil over medium heat.

3. Add shallots, garlic and carrots.

4. Remove chicken from ice bath.

5. Season with salt and pepper.

6. Place pieces of chicken into heated pot. Stir.

7. Add curry powder.

8. Add half of the potatoes and onions.

9. Sprinkle with salt and pepper. Stir.

10. Add chicken stock and stir.

11. Add remaining carrots, onions and potatoes.

12. Cover pot. Cook for 35 to 40 minutes on medium heat.
