German Cheese Buttons

  Similar to cheese ravioli, but with a Germans from Russia twist.
Ingredients:
    Dough:
  2 C   flour
  2   eggs
  1/2 tsp   salt
  1/4 tsp   baking soda
    water to make stiff dough
    Filling:
  1 16 oz   dry curd cottage cheese, regular will not work
  2   eggs
    salt and pepper to taste
  1 med   onion, chopped fine
    For frying:
  2 Tbsp   butter
  1 med   onion, sliced thin
    salt and pepper to taste
Directions:
  Roll out dough to 1/8 inch thickness.

Put ingredients for filling in food processor and process until nearly smooth. Place 1 teaspoon of filling on 1 half of dough about 2-3 inches apart. Fold remaining half of dough over filling. Cut into squares in between filling bumps. Press seams together, making sure there is a tight seam.

Place buttons into boiling water for 2-4 min. Buttons will float when done.

Heat a large skillet over medium-high heat; saute sliced onion in butter until almost transparent. Add buttons, and fry until crisp to liking; add salt and pepper to taste.
