Lentils and Rice with pita crisps and onions

  Lentils, Rice, pita, Onions
Ingredients:
  3 large   yellow onions, sliced
  3/4 cu   Olive Oil
  1 cup   rice
  1 cup   red lentils
  1 tsp   cinnamon
  1/2 tsp   allspice
  1 1/2 tsp   cumin
  1/2 tsp   cloves
  4   pitas
  8 tsp   garam masala, or garlic/cumin/cayenne/salt
Directions:
  Preheat oven to 400 degrees.
In large casserole dish, toss onions with oil, separating and spreading out rings. Roast for 25-30 minutes, stirring often.

Boil 4 cups of water in big heavy pot. Add rice, cinnamon, allspice, and cloves. Bring to a boil, lower heat, cover, and simmer for 15 minutes.
Uncover and add lentils, cumin, and allspice. stir gently a few times. cover, boil, lower heat, simmer 45 minutes, until liquid is absorbed. Remove from heat,and set covered ot aside for 10 minutes.
Fluff rice and lentils, and fold in onions.

Preheat oven to 350 degrees.
Slit open the pitas. Brush with olive oil, srinkle with sices, then bake 8-10 minutes. Store in plastic bags.
