Kama's Stuffed BBQ Chicken Breast

  A delicous, eloborate but easy chicken recipe everyone loves.
Ingredients:
  4 pcs   Chicken Breast w/skin
  1 box   Stove-top Stuffing
  1 pc   zuchini/chopped
  1 pkg   4 italian cheese mixture/shredded
  1 md   onion/chopped
    BBQ sauce (I prefer Jack Daniels original)
    salt
    pepper
  4 slices   provolone cheese
  12 oz   Chicken broth
Directions:
  Preperation:
Clean the chicken breast - leaving skin on.
Pre-heat oven to 400 degrees.

Cooking:
Melt some butter into frying pan and cook onion and zuchini. Season with salt and pepper. When the vegetables are cooked poor in the chicken broth and the Box of stovetop stuffing. Cook the stuffing with the vegetables as per the instructions on the box. When stuffing is cooked, stir in the 4 italian cheese mixture. Let cool.

Season the chicken breasts with salt and pepper. Pull up skin from breast and stuff cooled stuffing mixture under the skin. Bake the chicken for 30 minutes. Pull out chicken and brush with BBQ sauce, and cover each piece with a slice of provolone cheese. Bake chicken for another 15-20 minutes, until it is cooked thoroughly.

The juices in the pan make a great base for gravy.

If you do not like chicken skin you can pound out the chicken breasts, and roll the stuffing mix into the chicken.
