Easy Take Out Orange Chicken

  Healthy Choice In Place Of Take Out. Don't let the amount of ingredients worry you, almost all go in the sauce which takes 2 min to mix together. You will love it!
Ingredients:
  2 c   brown rice
  1 lb   chicken breast, cut into 1/2" pieces
  1 c   mandarine oranges
  1/3 c   orange juice
  1 tsp   olive oil
  1 tsp   reduced sodium soy sauce
  1 tbsp   honey
  1 pkt   splenda
  1 tsp   grated ginger
  2 tsp   orange zest
  3 cloves   garlic.minced
  1/2 tsp   cornstarch
  1/4 tsp   red pepper flakes (to taste)
    salt and pepper to taste
Directions:
  Cook rice according to package instructions.

Meanwhile, in a small bowl combine orange juice, soy sauce, honey, splenda, orange zest, ginger, cornstarch and pepper flakes. Set aside.

Heat olive oil over med high heat, add garlic cook 30 seconds. Add chicken, sprinkle with salt & pepper, cook for 4-5 min or until no longer pink in center. Add juice mix & mandarin oranges , cook until thickened stirring constantly, about 1 min.
Serve over rice.
**note**
If your house is like mine and everyone likes a different level of spice, add 1/4 tsp of pepper flakes to juice mix, then sprinkle 1/4-1/2 tsp on those who want a little more kick.
