Dryad Pancakes

  Versatile breakfast main dish. Add 1/2 C fresh or frozen fruit. To add a crunch add granola,trail mix, or chopped nuts.
Ingredients:
  1   egg
  1 c   flour
  3/4 c   milk
  1 tbls   packed brown sugar
  2 tbls   oil
  3 tsp   baking powder
  1/4 tsp   salt
    margerine, butter, shortening
Directions:
  Beat egg with hand beater in medium bowl until fluffy. Beation remaining ingredients except margerine just until smooth. For thinner pancakes, stir in additional 1 to 2 tbls milk. Heat griddle or skillet over medium heat or to 375. Grease griddle with margarine if necessary.
