  It's easy and cheap to roast your own chicken! Buy them on sale, eat the breasts for dinner #1, then make stock and have Chicken and Dumplings for meal #2!
Ingredients:
  1   whole chicken
  1 Tbsp   olive oil
  2 tsp   kosher salt
  2   carrots
  1   onion
  1 tbsp   butter
  1 tbsp   oil
  1 tsp   minced garlic
  1 cup   frozen peas
  1 tsp   rosemary
  1 tbsp   lemon juice
Directions:
  Rub oil and seasonings over the outside and inside of the chicken. Place breast side up in a heavy roasting pan and bake uncovered, at 450 degrees for 45 minutes or until leg joint wiggles easily and juices run clear. Remove from oven, cover loosely with foil, and let rest for 15 minutes before carving.
