Dad's Crockpot Pulled Pork Sandwiches

  Excellent for parties, potlucks, and family get-togethers. Prep the night before the event
Ingredients:
  1 4 lb   Pork Shoulder Roast
  1 large   Onion thinly sliced
  1 1/2 c.   water
  1 c   chopped onions
  1 bottle   BBQ sauce (I use Cookies Original)
    Hamburger buns
Directions:
  The night before: Put half of the slicked onions on bottom of crockpot place roast on top onions, pour the water over the top and place the rest of the sliced onions on top of the roast. Cook on low for 8-10 hours (overnight works great). Next day/morning drain the liquid and chop/tear/rip up meat removing the fat (this is hot so you might want to let cool for a little while). Place pork back in the crockpot, add chopped onions and BBQ sauce cook on Low for 4 to 6 hours. Stir occasionally. Can add more BBQ sauce when serving (different types or the same). Serve in hamburger buns. Depending on size of sandwiches may make more than 8-10 servings.
