Bourbon Brown Sugar Salmon with Onion Sauce

  Bourbon Born Sugar Salmon with Onion Sauce
Ingredients:
  1 2 1/4 lb   Salmon Fillet
  3 cups   sliced thin onion slices
  1/2 cup   brown sugar
  1/2 cup   water
  1/2 cup   bourbon
  1 TBSP   soy sauce
  1 tsp   pepper
  3/4 tsp   salt
  6   tarragon sprigs
  4   thyme sprigs
  1/3 cup   grape nuts
  1/4 cup   chopped nuts
  3/4 tsp   salt
  2 TBSP   brown sugar
  2 TBSP   honey
  1 1/2 tsp   water
    cooking spray
Directions:
  Place salmon in a 13 X 9 dish. Combine onion and net 8 ingredients (onion through thyme) Pour over salmon. Cover and marinate in refrigerator 2 hours turning occasionally.

Preheat oven to 350.

Place cereal and nuts in baking dish. Bake @ 350 for 7 minutes or until toasted. Place mixture in food processor. Pulse 4 times or until finally chopped.

Remove salmon from marinade; reserve marinade. Arrange the salmon diagonally on a broiler pan coated with cooking spray. Sprinkle with 3/4 tsp salt. Combine 2 TBSP sugar, honey and water stirring with a whisk. Spread honey mixture over salmon; sprinkle with cereal mixture pressing into salmon. Bake @ 350 for 20 mins or until fish is flaky.

While salmon bakes, plac reserved marinade in small saucepan. Discard tarragon and thyme. Bring marinade to a boil over med-high heat; cook until reduced to 3/4 cup. serve with salmon.

Serve with wild rice and broccoli.
