Hearts of Palm Salad

  Low carb alternative to potato salad
Ingredients:
  2 14.5 oz cans   Hearts of Palm
  2 tsp   Lemon Juice
  1 tsp   Mustard
  1 tblsp   Extra Virgin Olive Oil
  1 clove   Garlic, pressed or minced
  2 tblsp   Fresh Herbs, chopped (tarragon or dill are both good choices)
Directions:
  Slices hearts of palm into uniform bite-sized pieces. Whisk together juice, mustard, oil and garlic. Toss dressing with hearts of palm. Add herbs and toss lightly to distribute.
