Chicken Satay w/ Peanut Sauce***

  Weight Watchers New Complete Cookbook Page 76 (Points Value 2)
Ingredients:
  3 Tbs   Creamy Peanut Butter
  2 Tsp   Sugar
  2 Cloves   Garlic, Minced
  2 Tbs   Soy Sauce, Reduced Sodium
  1 Tbs   Water
  2 Tsp   Rice Wine Vinegar
  1   Sriracha Hot Chili Sauce, Several Drops
  1 Tbs   Cilantro, Fresh; Chopped
  2 5 oz   Chicken Breast, Boneless Skinless, Cut into 8 Lengthwise Strips
Directions:
  1. Soak 8 Wooden Skewers in water at least 30 min. Line rach ofbroiler pan with foil and spray with nonstick spray.

2. To make peanut sauce, whisk together peanut butter, sugar, and garlic in small bowl until smooth. Add soy sauce, water, vinegar, and sriracha, whisking until blended. Transfer to serving bowl and sprinkle with cilantro.

3. Preheat broiler

4. Thread Chicken onto skewers and spray with nonstick spray. Arrange skewers on rack of broiler pan and broil 5 inches from heat until cooked through, about 4 mins per side.

Serve with peanut sauce.
