Disney's Tamale Pie

  Open pan meal. Mildly spicy meal, pleasantly smoky and tangy but not complicated.
Ingredients:
  3 Tblsp   canola oil, divided
  1 sm   onion
  1 lg   clove of garlic, finely chopped
  1 lb   ground beef (or turkey)
  1/2 tsp   chipotle puree or smoked paprika
  1 1/4 tsp   kosher salt, divided
  1 Tblsp   +1 tsp suger, divided
  2 tsp   white vinegar
  1 8 oz   can Hunts tomato sauce
  1 15 oz   can beans (pinto, kidney, or black)
  2 c   frozen corn
  1/3 c   flour
  2/3 c   cornmeal
  1 tsp   baking powder
  1 Tblsp   sugar
  1/2 c   buttermilk
  1   egg
  1 c   grated cheddar cheese
Directions:
  Heat oven to 400. Saute onions (about 7-8 minutes). Add garlic and saute for another minute. Add meat and cook through. Stir in chipotle puree, salt, sugar, vinegar, tomato sauce, beans, and corn. Simmer. Taste for seasoning.

Whisk together flour, cornmeal, baking powder, remaining salt, remaining sugar. Whisk together in another bowl egg, buttermilk, and remaining oil. Pour liquids into dry ingredients and combine before adding the cheese then pour mixture over filling in pan.

Top with remaining cheese and bake 15- 20 minutes, checking the cornbread to see if browned.
