  Traditional Italian cookies that pair nicely with coffee or tea and have an extremely long shelf life. These make excellent gifts!
Ingredients:
  3/4 c   sugar
  1/2 c   oil
  2   eggs
  2 tsp   vanilla
  1/4 tsp   salt
  1 1/2 tsp   baking powder
  2 c   flour
  1/2 c   walnuts, chopped
    cinnamon and sugar
Directions:
  Combine sugar and oil in medium bowl. Stir in eggs and vanilla until well blended. Combine all dry ingredients. Gradually mix dry into wet. Stir in additions (be creative if you want :). On lightly floured surface turn dough. Form 10x3 log. Place log on parchment lined cookie sheet. Flatten slightly. Sprinkle with cinnamon and sugar. Bake for 25-30 minutes at 350 degrees until center is firm. Cool 10-15 minutes. Cut crosswise in long, thin (1/2") slices. Place cut side down on baking sheet and cook at 325 degrees for 10-20 minutes or until browned. Turn once during baking.
