Fruit and vanilla yogurt

  With vanilla seeds flavouring the yogurt and a compote of fresh plums, apples and pears, this dessert tastes and looks great.
Ingredients:
  2   Braeburn apples
  2   pears
  2   plums
  1   vanilla pod
  99.99 g   caster sugar
  1   cinnamon stick
  1 litre   water
  99.99 ml   natural yogurt
  1 bunch   fresh mint
Directions:
  1. Mix 1tbsp sugar with the yogurt and the seeds from the vanilla pod and return the yogurt to the fridge.
2. In a large saucepan, dissolve the remainder of the sugar with 1 litre of water over a medium heat and add the cinnamon stick.
3. Peel and core the pears (leaving whole), add to the saucepan and simmer for 10 mins. Peel, core and quarter the apple, add to the saucepan and simmer for a further 6 mins. Halve the plums, remove the stones, add to the saucepan and simmer for a further 4 mins. Remove the fruit and keep to one side.
4. Place the syrup back on the heat and reduce to a quarter or until syrup consistency. Put the fruit back with the syrup, allow to cool, then place in the fridge for 4 hrs.
5. Divide the fruit up between 4 bowls and add a spoonful of vanilla yogurt to each bowl. Garnish with a cinnamon stick and a sprig of mint (optional).
