Crockpot Cptn Chicken and Rice

  Weight Watchers Crockpot Meal serves .5 c rice and 2.5 c chicken mix per serving. 9pts
Ingredients:
  4 c   dried shitake mushrooms, sliced
  2 c   chopped onion
  1 c   chopped celery
  2 cloves   minced garlic
  2 lbs   boneless, skinless chicken breast, chopped
  2 TBSP   flour
  1/2 c   fat free chicken broth
  1 TBSP   curry powder
  2 tsp   salt
  1/2 tsp   pepper
  1/2 tsp   paprika
  6 c   canned crushed tomatoes
  1/2 c   golden raisins
  4 c   cooked brown rice
Directions:
  Coat a large skillet with cooking spray. Add mushrooms, onion, celery and garlic and sauté until vegetables are tender, about 5 minutes. Place vegetables in slow cooker; add chicken.

In a cup, stir together flour and chicken broth until smooth. Add to slow cooker. Add curry powder, salt, pepper, paprika, crushed tomatoes and raisins, and stir in.

Cover and cook on low for 5 hours. To serve, spoon 1/2 cup rice onto each of 8 plates. Top each with chicken and sauce and serve. Yields 2 1/2 cups chicken mixture and 1/2 cup rice per serving.
