Zesty Salsa Chicken and Black Bean Casserole THM E

  Brown rice, chicken, black beans, and salsa combine to make a delicious carb filled E meal!
Ingredients:
  3/4 cup   uncooked brown rice
  1 1/2 cups   reduced sodium chicken broth
  2   cooked chicken breasts
  15 oz   can of drained and rinsed black beans
  1 tsp   cumin
  1/2 tsp   salt
Directions:
  Combine brown rice and chicken stock in a medium sized pot. Bring to a quick boil, then cover and reduce to simmer. Allow it to simmer covered until cooked through, approximately 40 minutes.
To the rice add: diced chicken breasts, salsa, cumin, salt, and black beans.
Mix thoroughly, and then put into a lightly greased 9x13 pan. Bake in oven at 350 for 35 minutes and then serve.
