Vegetable Stir Fry with Pork or Chicken

Ingredients:
  2 Tbsp   oil
  1/2 lb   Chicken or pork, diced
  2 cloves   garlic, chopped
  4 Tbsp   Soy Sauce
  1 medium   Bell Pepper, Sliced
  1 c   Carrots, sliced
  1 c   celery, sliced
  1 c   zucchini, sliced
  1 c   green onions, sliced
  1 tsp   salt
  1/2 c   water
  1 can   sliced mushrooms
  1 Tbsp   cornstarch
  4 servings   rice, cooked
Directions:
  1. Heat oil in wok or large skillet. Add meat, garlic and 1/2 soy sauce and stir fry for 10 minutes.
2. Stir in bell pepper, carrots, celery, zucchini, and green onions. Season with salt and saute for 6-8 minutes.
3. In a small bowl, mix together water, remaining soy sauce, and cornstarch. Stir into vegetables and cook 1-2 minutes, or until sauce thickens.

Serve over rice.
