Tuna Noodles Deluxe

No canned soup here! Packed with herbs and veggies, this is one great casserole. |
Ingredients: |
|
1/2 cup |
|
light sour cream or plain yogurt |
|
1/2 cup |
|
light mayonnaise |
|
2 tsp |
|
mustard |
|
1/2 tsp |
|
salt |
|
1/2 tsp |
|
dried thyme |
|
1/4 tsp |
|
dried dill |
|
1/4 tsp |
|
black pepper |
|
12 oz |
|
chunk light tuna, 2 cans |
|
4 |
|
green onions |
|
1/2 cup |
|
frozen peas |
|
1 |
|
tomato, chopped |
|
1 |
|
small zucchini, chopped, optional |
|
1 cup |
|
shredded cheddar cheese |
|
2 cups |
|
small dry pasta, cooked in salted water, drained |
|
1 cup |
|
potato chips, crushed |
Directions: |
|
In a large bowl, mix everything except the pasta and the potato chips. Grease a 2 qt. casserole or baking dish. Pour half the noodles into the bottom of the dish. Spread half the mixture on top of the noodle layer. Spread the rest of the noodles over and top with the rest of the tuna mixture. Spread to cover the noodles. Sprinkle with the potato chips. Bake at 350 for about 30 minutes or until hot. Or microwave for about 8 minutes. Let stand about 5 minutes before serving.
**This would be even great without the tuna if you wanted a veggie dish.
**Substitute or add any other veggie you like, shredded carrots, mushrooms, etc.
