Taco Potato Bake

  Taco potatoes
Ingredients:
  6   Baking Potatoes (peeled & cut)
  1/3 Cup   olive or vegatable oil
  1 pkg   taco seasoning
    salt
    pepper
  2 cups   monterrey jack and cheddar blend
Directions:
  Peel and cut potatoes into medium sized chunks. Place in ziploc bag with oil and taco seasoning. Seal and shake until well coated.

Sparay 9 X 13 baking dish with cooking spary and spread the potatoes out in it. Sprinkle with a little seasoned salt and black pepper. Place in a 400 degree oven for 40 minutes. At 20 minutes, stir potatoes around to get all sides browned. Sprinkle with the cheese about 10 minutes before the end of the cooking time.
