Szechwan Green Beans

A great side dish or snack to satisfy a spicy, salty craving. |
Ingredients: |

1 lb |
|
green beans |
|
1 tbsp |
|
olive oil |
|
1 tsp |
|
salt |
|
1/2 tsp |
|
crushed red pepper flakes or szechwan pepper |
|
1 tsp |
|
sesame oil |
|
3 |
|
bacon strips, cooked and crumbled |
Directions: |

Bring a pot of water to a boil and add some salt. De-string each bean from the top stem end and toss them into a colander. Rinse well under cold water and drain. Scoop the beans into the boiling water and blanch for about 3 minutes to partially cook. Remove with tongs and transfer to a baking sheet or perforated grilling pan. Add the olive oil, salt and pepper flakes and toss well.
Broil method: turn on your broiler and broil the beans, turning often until they are slightly charred and tender.
Grill method: place your grilling pan over direct medium-high heat and grill beans, turning often until they are slightly charred and tender.
Transfer cooked beans to a serving dish and drizzle with sesame oil and and sprinkle with the bacon. Serve at any temperature.
