Sweet and Sour Shrimp

  Homemade sweet and sour sauce over lightly fried shrimp.
Ingredients:
  2 tsp   cornstarch
  4 tsp   water
  1/3 cup   white or rice vinegar
  1/4 cup   brown sugar
  1 tbsp   ketchup
  1 tsp   soy sauce
  1 lb   peeled raw shrimp
  1/2 tsp   salt
  1/4 tsp   pepper
  1/4 cup   cornstarch
  1 cup   peanut oil
Directions:
  In a small bowl or glass measuring cup, mix together the 2 tsp cornstarch and water. Mix in the vinegar, brown sugar, ketchup and soy sauce and set aside.

Pat shrimp dry and sprinkle with salt and pepper. Toss in cornstarch until well coated. Pour enough oil in a skillet to come about halfway up the the shrimp (about 1/2 inch). Heat the oil until hot but not smoking. Add shrimp and fry until golden brown, about a minute or so per side. Remove shrimp to paper towels to drain. Pour oil out of pan and wipe with a paper towel. Add sauce mixture and heat until thickened. Serve sauce with shrimp or toss until coated.
