Stuffed Cabbage Strata

  Use only ground chicken for this recipe. Do not substitute ground turkey or ground beef as it will taste bad.
Ingredients:
  1 lb   Ground Chicken
  1 medium   onion, diced
  8 slices   Center Cut Bacon, Cooked & Crumbled
  4 cups   Coleslaw Cabbage (angel hair variety)
  1 can   Tomato Sauce (16oz)
  1/2 cup   water
    Salt & Pepper to taste
  1 cup   instant brown rice
Directions:
  In hot frying pan, cook bacon until crisp. Remove all but 1 tbsp of bacon grease and discard. Add onion to pan and saute until almost translucent. Add rice to onions and brown, stiring constantly to avoid burning, for 2 minutes. Remove from heat.

Coat 9x11 baking dish wish cooking spray. Spread 2 cups cabbage in dish then spread onion & rice mixture on top of cabbage. Add another 2 cups of the cabbage mix on the top of casserole.

Return skillet to stove, add tomato sauce and water. Heat and simmer for 2 minutes. Add crumbled bacon to the top of the casserole and pour tomato mix over the bacon.

Cover with foil and bake in 350 oven for 45 minutes. Remove foil and bake another 5 minutes. Remove from oven and serve.
