Strawberry Rhubarb Pie

  The quintessential recipe for the peak of summer pie!
Ingredients:
  4 c.   rhubarb, sliced
  3 c.   strawberries, sliced
  1 1/2 c.   sugar
  3 T.   flour
  1 T.   milk or egg white
  1 T.   sugar
  2 recipes   Flaky Pie Crust
Directions:
  Sift together flour and 1 1/2 c. sugar, then stir together rhubarb, strawberries & flour mixture. Pour into prepared crust, place second crust on top of filling and pinch crusts together. Brush egg white or milk over top of crust and sprinkle with sugar.

Place on lower rack of oven on top of a spill guard

Bake at 400 degrees for 20 minutes... Loosely place a piece of foil on top of pie and bake for an additional 25-40 minutes, until crust is golden brown.
