Shrimp Scampi Kabobs

Ingredients: |

fresh lemon juice |
|

olive oill |
|
1/8 tsp |

salt |
|
1/8 tsp |
|
ground pepper |

1/2 tsp |

bottled minced garlic |
|

shrimp, peeled and deveined |

bamboo skewers |

Directions: |
|
Combine lemon juice, olive oil, salt, pepper and shrimp in a large zip top plastic bag. Seal and shake to coat. Marinate in refrigerator for 30 minutes, turning occasionally. While shrimp are marinating, soak bamboo skewers in water.
Remove shrimp from bag and discard marinade. Thread shrimp onto skewers. Heat a grill pan over medium high heat. Coat both sides of shrimp skewers with cooking spray. Cook 2 minutes on each side or until shrimp are done.
