Place sugar and water in a small sauce pan, bring just to a boil and stir until sugar is dissoved. Remove from heat, set aside to cool. This makes a simple syrup.
Remove rind of water melon and roughly chop into 1 - 2 inch pieces. Place in a blender or food processor and puree until smooth, doing in batches if necessary. Strain watermelon, reserving juice. Pour juice into a pitcher. Add cooled simple syrup, squeeze in lime juice, stir in blueberries. Serve over ice and garnish with mint. Enjoy!
