Quinoa Chicken Salas

Perfect for when you have left over chicken |
Ingredients: |

1 Cup |
|
Quinoa, rinsed and drained |
|
2 cup |
|
water |
|
1 1/2 cup |
|
seedless grapes |
|
6 cup |
|
mixed greens |
|
3 cup |
|
boneless cooked chicken meat |
|
|
|
salad dressing |
|
|
|
salt and black pepper |
Directions: |
|
1. Put quinoa and water in a saucepan and bring to a boil. Boil for 15 mn or until liquid is absorbed
2.Remove from heat, uncover, and let cool.
3. Cut grapes in half.
4. Chop chicken into bite size pieces and add to grapes.
5.Add quinoa and toss to combine.
6. Drizzle with salad dressing and toss again.
7. Put salad greens on plates and mount with chicken mixture. Drizzle with more salad dressing.
