Pierogies with peppers & onions

  Your family will love this quick and easy main dish or side dish.
Ingredients:
  1 Tbsp   Extra Virgin Olive Oil
  1/2   1/2 Purple Onion, julienned
  1 1   Medium red pepper, julienned
  1 1   Meduim green pepper, julienned
  2   Cloves garlic, finely minced
  2 Tbsp   Butter
  12 1   Cheddar cheese pierogiesq, thawed
  1/4 cup   1/4 cup light cream
  2 Tbsp   Flour
  1 tsp   Pepper
Directions:
  *Saute purple onions in Extra Virgin Olive Oil in large skillet over medium heat, stirring freaquently for about 2 minutes just until barely transparent
*Add peppers and cook about 2 more minutes until they are barely tender
*Add garlic and cook for 1 minute
*remove from pan into bowl
*Add butter to pan and melt
*Add pierogies to pan and cook about 2 minutes on each side, do not allow to brown
*Remove to serving platter
*Mix cream, flour and pepper in container with lid and shake until blended
*Add to skillet and bring just to a boil
*Reduce heat and simmer until thickened
*Add veggies and cook 1 minute or until heated through
*Pour over pierogies and serve
