Philly Chicken Cheese Steaks

olive oil |

thinly sliced onion |
|
1 lb |
|
skinless, boneless chicken breasts |
|
1 each |
|
sliced red bell pepper |
|
|
|
small flour tortillas or french rolls |
|
4 ou |
|
light velveeta cheese |
Directions: |
|
Cut chicken into strips.
Saute onion in oil until browned and very soft, about 10 min
Add the chicken and bell pepper; saute until the chicken is golden brown and cooked through 5-8 minutes. Season with salt and pepper.
Place chicken on roll or tortilla and drizzle with melted cheese.
