Pesto Pasta with tomatoes

Ingredients: |

Rotelle Pasta (or angel hair) |
|
1/4 cup |
|
EVOO |
|
2 tbsp |
|
water |
|
2 cups |
|
fresh basil leaves |
|

|
garlic clove, chopped |
|
1/3 cup |
|
grated Parm cheese |
|
1/2 cup |
|
thinly sliced tomatoes |
Directions: |
|
Bring a large pot of water to a boil. Salt the water and add the pasta, cook until tender. Drain and set aside.
While the pasta is cooking, combine the oil, water, basil, garlic, and 1/4 cup of the Parmesan in a blender and puree.
Toss the pureed pesto with the pasta, tomatoes, and remaining Parm.
Serve.
