Onion Chicken Casserole

Cheesy, onion flavored chicken and potato casserole. |
Ingredients: |

1 1/2 lb |
|
potatoes |
|
16 oz |
|
sour cream |
|
10 3/4 oz |
|
condensed cream of chicken soup |
|
1 cup |
|
onions |
|
1 1/4 lb |
|
boneless chicken |
|
2 cups |
|
cheddar cheese |
Directions: |
|
Slice potatoes 1/4 inch thick. Microwave in covered bowl about 10 minutes until softened.
Mix sour cream, soup and chopped onions. Add to potatoes in bowl and mix lightly.
Spoon mixture over cut up chicken in 13 x 9 inch baking dish
Sprinkle with cheese.
Bake at 375 for 30 min or until chicken is cooked through.
Note: if I am in a rush I will pre-cook the chicken while softening the potatoes. Or can use leftover chicken.
