Mom's Meatloaf
by Laurie Duncan
serves: 6
Good old fashioned meatloaf with its own BBQ glaze.
Ingredients:
  3 lbs   hamburger
  2 ea   eggs
  1/2 c   quick oats
  3/4 c   ketchup
  1/4 c   mustard
  1/2 c   brown sugar
  1 sm   onion, chopped
Directions:
Mix hamburger, eggs, onions and quick oats together in large bowl. Mix well, using hands. Line a 9 x 13 baking pan with aluminum foil.

Put the hamburger mixture into center of lined pan making into a loaf shape in the center of the pan, leaving space around the edges of the loaf for fat to drain.

Mix the ketchup, mustard and brown sugar together to make a BBQ sauce. Take a fork and make a grid type print on the top of the meat. This will make ridges in the meat for the topping to sink into and keeps the topping from running down the sides of the loaf quite so easily. Top with sauce.

Bake about 45-1 hour in 350* oven. Remove and cut into rectangles or squares to size you want. Remove the meatloaf from the pan and place onto serving plate, this removes the meat from the fat. If you let the fat cool, you can pull the foil out and the pan comes out VERY easy to clean.
