Mom's Meat Loaf

  A taste of home comes with this meat loaf topped with ketchup.
Ingredients:
  1 ea   egg, lightly beaten
  1 can   v8 juice (5.5 oz)
  1/2 cup   seasoned bread crumbs
  1 ea   onion soup mix
  1/4 cup   grated parmesan cheese
  1/4 tsp   garlic powder
  1.50 lbs   ground beef
  1/3 cup   ketchup
Directions:
  In a large bowl, combine the egg, v8 juice, bread crumbs, soup mix, cheese and garlic powder. Crumble beef over mixture and mix well. Pat into an ungreased 9-in. x 5-in. loaf pan.

Bake, uncovered, at 350 for 30 minutes. Spread ketchup over top; bake 5-10 minutes longer or until no pink remains and a meat thermometer reads 160.

Serve immediately or, before baking, cover and freeze meat loaf for up to 3 months.
